2 Red Bell Peppers, chopped fine
3-4 Stalks Scallion, chopped fine
2-3 Courgettes (zucchini) sliced really thin or made into Pasta with a Spirooli machine
1 Squash (any kind) if Courgettes not available
Use a Spirooli machine to make noodles from the squash. Put in a pasta bowl and pour a Pasta sauce of your choice
