Chilled Watercress and Pear Soup

4 Pears, cored and diced
1 T. Olive Oil or Grapeseed Oil
2 oz (85 grams) Watercress juice
1 Cup Celery
1 Onion, roughly chopped
Celtic Sea salt to taste
1 Cup Almond or Cashew milk
Cardamon powder to taste

Pour all ingredients in a Blendtec or similiar powerful blender such as a Vitamix and blend on high speed. Adjust seasonings to taste. Chill and serve, garnishing with a few sprigs of watercress.
