Apricot Carrot Bread

2-3 Carrots, finely grated
2 tsp Raw Honey or Agave
6-8 Dried Apricots, soaked 4-6 hours
1t Almond Extract
1/3 Cup Raisins
1 tsp Cinnamon
1 Cup Sprouted Flax seeds, ground
Pinch Celtic Sea Salt

Put ground flaxseeds in a mixing bowl. Drain soaked apricots, and put in a food processor along with the grated carrots, raw sweetener, almond
extract, cinnamon and sea minerals.

Pulse until everything blends into a ball. Taste for sweetness and add more agave or honey if needed. Put in the mixing bowl with the ground flaxseeds and add the raisins. Mix well. Put in loaf pan (they can be purchased in individual portion sizes).

Place in dehydrator for 5-6 hours. Take out of loaf pan. Turn it over on dehydrating tray and return to dehydrator until it is completely dry on the inside.
